Title: Smothered Salmon

2cSalmon
3/4cDiced celery
2 Thin slices bacon, chopped
1/2cBoiling water
2tbMelted shortening
3/4cChopped onion
1tsSalt
2 Thin slices lemon

Combine shortening, bacon, celery, onion, and salt. Fry until light brown. Place salmon in center of baking pan. Place slices of lemon on top of salmon. Arrange cooked vegetables and bacon around salmon. Add water. Cover. Bake in moderate oven (375 F) about 30 minutes. Uncover and bake 10 minutes. 6 servings. The Household Searchlight
